The meals usually highlight the vegetables, especially seasonal fresh veggies, such as in the Ancient Grain Bowls in the above picture. Apart from baby arugula and chickpeas, it features vegan butter and dairy-free garlic cheese. It’s tagged high-protein with 26 g of protein per portion. Moreover, it takes only 30 minutes to prepare.
Purple Carrot offers a convenient Less Prep option that doesn't require any chopping or prepping, and the sauces come pre-made. This results in quicker meal preparation and less cleanup afterward. That doesn’t mean that the meal kits aren’t convenient. Quite on the contrary, most of them are super easy and are suitable for beginners.
Even the meal kits that aren’t labeled Low Prep come with ready-made sauces, and most of the produce is trimmed or chopped. I was especially impressed by how the garlic arrives minced, which is one of my least favorite parts when cooking.
